Balkenbrij



Balkenbrij is a traditional Dutch style form of liverwurst, technically a relative of the New England scrapple. It's usually made with pork liver and mainly other various cuts of the animal, all of which are cooked, ground, then cooked again with oatmeal and a special spice mix ("rommelkruid") to achieve the form of a loaf.
